The Power of Easy, Nourishing Meals
If you’re anything like me, cooking nourishing meals every night can feel repetitive and complex. On busy days, it’s tempting to grab whatever is quick and convenient, but I always feel better when I choose something home-made that truly fuels me.
That’s why I love meals like this Chicken Stir Fry. It’s quick, colorful, and packed with nutrients! In less than 30 minutes, I can sit down to a meal that feels supportive and grounding, even on the busiest of days. It’s a simple reminder that nourishment doesn’t have to be complicated, and our bodies thank us when we make these small but powerful choices. Enjoy!

Chicken Stir Fry Recipe!
Ingredients:
3 tbsp avocado oil
1 lb skinless, boneless chicken thighs
1/4 white or yellow onion, diced
1 bell pepper, chopped
1 medium zucchini, sliced
2 carrots, sliced
1 head of bok choy
1/4 cup coconut aminos
1 tbsp apple cider vinegar
1 tbsp sesame oil
3 cloves of garlic, minced
2 tsp ginger, minced
1 tbsp chili flakes
Salt
Ground Pepper
*Please use all organic ingredients and pasture-raised/finished chicken!*
Directions:
Chop the chicken into bite-sized pieces while heating a large pan or wok on medium heat. Add avocado oil to the pan and heat it before adding the chicken.
Season the chicken with some salt and pepper, and cook for around 3 minutes on each side or until mostly cooked through. Remove and put aside.
Add the chopped onion to the pan and cook for 3 minutes before adding the remaining veggies, except the bok choy. Add a pinch of salt and stir to combine. Cover and stir occasionally for 6-8 minutes, or until the veggies are tender.
While cooking the veggies, mix the coconut aminos, vinegar, chili flakes, sesame oil, garlic, and ginger in a bowl or jar.
Add the sauce and turn the heat to medium-low. Stir together and let simmer for 2-3 minutes.
Add the chicken and bok choy. Let everything cook together and the bok choy soften before serving. Combine with a base of your choice, like cauliflower rice, or just on its own!
Top with green onions, chopped nuts, or avocado for a boost of healthy fats!
Notes: Use whatever veggies you would like; this is just what I had lying around! Mushrooms and broccoli are both delicious additions.
Serves around three people, or one dinner and some leftovers.
