Delicious Detoxing Chicken Soup Recipe!

I'm not sure about you, but when it gets cold, I just want to eat soup all the time. It not only provides a warm, soothing experience, but soup can be extremely nurturing as well. When I make a soup recipe, I love to play around with adding different veggies, meats, fats, and seasonings. It's like a dance in the kitchen, a very delicious dance... Last week I made a scrumptious detoxing chicken soup, and I want to share it with you!


Ingredients:

  • 1/4 White or Yellow Onion, Chopped

  • 3 Cloves of Garlic, Minced

  • 3 tbsp Fresh Ginger, Minced

  • 1 tbsp Fresh Turmeric, Minced

  • 2 Celery Stalks

  • 2 Large/Medium Carrots

  • 1-2 Bell Peppers

  • 1 Package of Pasture-Raised Skinless Boneless Chicken Thighs

  • 3 tbsp Avocado Oil

  • 1/2 Lemon Juiced

  • 2 Cups Pasture Raised Chicken Broth

  • Salt

  • Pepper

  • Red Chili Flakes

  • 2 tbsp Filtered Water


***Please remember all organic ingredients!


Directions:

  1. Heat a large pot on medium heat.

  2. Mince the garlic, ginger, and turmeric. Chop the onion, celery, carrots, bell peppers, and any other veggies you want to add, such as zucchini, brussels sprouts, or broccoli!

  3. Add all veggies along with garlic, ginger, and turmeric to the pot. Add filtered water and put the lid on, let the veggies soften. Mix it a few times.

  4. While the veggies are cooking, chop your chicken into bite-sized pieces. When the veggies are soft, mix the chicken into the pot. Mix often.

  5. When the chicken is almost fully cooked, add salt, pepper, chili flakes, and any other seasonings that you would like to add. Seasonings such as paprika, garlic powder, and any herbs like rosemary go nicely with soup. Get creative!

  6. When the seasonings are all mixed in, add the chicken broth, avocado oil, and lemon juice. Stir this all together, taste as you go, and adjust anything based on your palate.

  7. Bring the soup to a boil, then cover and let it simmer for 20 minutes.

  8. Before enjoying, taste your soup and make sure it's perfect. Serve with a drizzle of olive oil or some sliced avocado for an extra fat boost!


Notes:

When I make soup, I constantly change the recipe up to fit what I have in my home, or what tastes I am craving that day. Cooking can get intimidating, but it doesn't have to be. You don't need a bunch of crazy ingredients to make a dish that is nourishing and delicious. Use what you have and play around.


This recipe can also be doubled for larger families, and it makes great leftovers. Fun fact, the longer it sits, the better it gets, all those flavors soak together. YUM!


If you don't have access to fresh turmeric, I have also made this soup by using ground turmeric instead and adding it when I add the other seasonings. It is still delicious!


I let the veggies cook with water in the pot in the beginning instead of oil to keep the integrity and full nutritional value of the oil when it's added later on. Cooking oil at high heat can strip away the nutrients that your body loves.


Make any switches or additions to ingredients that you need to match your lifestyle or health plan. Such as if you are looking for a protein boost, switch the broth to bone broth. If you need more fats, add more oil or avocado when serving. Make it yours.
